My first memories of cooking are with my mother, baking cakes in our home kitchen and eargerly awaiting the moment when we were allowed to eat the raw cake batter and lick the butter icing out of the mixing bowl. My passion for food and travel lead me to living and working overseas in the Caribbean, Miami and California where you find such diversity of food and flavours with a true global influence. I decided to move back to the UK and inject a breath of fresh air into some British classics with my own food offering, rather than the often stagnant influence from classical European cooking. People could feel the love that had gone into the curation of the farm shops, but also my food: Great British classics done well, but with the addition of rich, exciting flavours from dishes such as Ceviche, Asian Tartar or simply infusing my jus for Wellingtons with Mexican Ancho Chillies. The Cotswold Guy has taken a fresh and innovative approach to British classics while infusing flavours and inspiration from across the globe. My search for the best ingredients and pushing the flavour boundaries has led me to cook for many celebrities and build many relationships and friends with fellow food lovers.
