Seek out a family-run trattoria on one of the city’s quieter streets, where locals gather over plates of tortelli d’erbetta. “You absolutely have to try it. It’s a traditional dish from the Parma area and one of my favourites,” Anita shares. These delicate herb-and-ricotta parcels – freshly rolled each morning and dressed with butter and aged Parmigiano-Reggiano – have been perfected over generations.
